Middlecut Breyani

Ingredients

  • 1 x 425g can Saldanha Middlecut OR Pilchards
  • 4 tbsp breyani masala
  • 2 tsp crushed garlic & ginger paste
  • 3 large onions, chopped
  • ¾ cup buttermilk
  • 1 tsp salt
  • 3 cinnamon sticks
  • 3 medium tomatoes, grated
  • Dash of lemon juice
  • 2 tsp tomato paste
  • ½ cup lentils
  • Handful coriander
  • 5 potatoes, cubed
  • 2 cups basmati rice

 

Method

  1. Fry onions until golden brown. Drain onion on roller towel.
  2. Melt 50g butter or margarine in a pot. Add 25ml oil.
  3. Add onion, breyani masala, buttermilk, crushed garlic & ginger paste, salt, cinnamon, grated tomatoes, tomato paste, dash of lemon juice and 2 cups of water.
  4. Drain and flake middlecut or pilchards and add to above.
  5. Simmer until thick.
  6. Add coriander and remove from stove.
  7. Fry potatoes in deep oil as for chips.
  8. Cook rice until half done.
  9. Cook lentils until done.
  10. Stir everything together gently.
  11. Place breyani in a dish and microwave for about 8 minutes.
