Middlecut on Toast

SERVES 4

Ingredients

  • 1 x 400g can Saldanha Middlecut OR Pilchards in Tomato Sauce, drained
  • ¼ cup plain yoghurt
  • 1 tbsp basil pesto
  • 1 tsp lemon/lime juice, to taste
  • Basil leaves
  • 2 tbsp mayonnaise
  • Salt and black pepper to taste

 

Method

  1. Drain and mash the middlecut or pilchards.
  2. Mix yoghurt, pesto, lemon/lime juice and mayonnaise together and stir into the mashed middlecut or pilchards.
  3. Serve on toast or fresh bread.
  4. Garnish with basil leaves, garnish to taste with salt and black pepper and serve with lemon or lime wedges.
