Sardines Pizza

Ingredients

  • 1 x 215g can Saldanha Sardines
  • 1 large pizza base
  • 10 kalamata olives, pitted and halved
  • 6 – 8 sundried tomatoes, halved
  • 8 – 10 cherry tomatoes, halved
  • 1 cup mozzarella cheese, grated
  • ¼ cup tomato sauce
  • A handful of fresh rocket

Optional toppings: When out of the oven, add sliced avocado
instead of the rocket leaves.

Method

  1. Coat pizza base with tomato sauce.
  2. Sprinkle with grated cheese.
  3. Drain and halve the sardines lengthwise.
  4. Place sardines, tomatoes and olives on top of pizza.
  5. Bake at 220˚C for 10 – 15 minutes.
  6. Top with fresh rocket before serving.
